Tip #1:  Feel free to use your favorite liquid sweetener.  I’ve used both raw coconut nectar (because it is diabetic friendly and low-glycemic) and maple syrup and both worked fine.

Tip #2:  Feed free to use homemade almond butter instead of peanut butter if you prefer.  I’ve used both and although I prefer the peanut butter, they both worked fine.

Tip #3:  This recipe will make approximately (16) thick squares in an 8 x 8 dish and approximately (32) thinner squares in a 9 x 13 dish.

Tip #4:  If you keep them in the refrigerator, they will be softer, more like a rice crispy treat.  But…if you keep them in the freezer, they are more solid and taste like a cold Nestle crunch bar (with peanut butter)…my favorite way to eat them!  You have to try them from the freezer at least once…they are so good!

Just make sure you press them down in the pan as firm as you can so they will stick together good.

Fudgy Peanut Butter Crispy Squares (Vegan, Gluten-Free, Dairy-Free, No Refined Sugar)

Ingredients

  • 3 cups organic brown rice crispy cereal
  • 2 scoops Maximum Vibrance - Chocolate
  • 1 cup organic peanut butter
  • 1 cup organic maple syrup
  • 1/2 cup organic coconut oil (melted/liquid)
  • 1/4 cup organic raw cacao powder

Directions

Step 1 Add all ingredients to a medium sized mixing bowl and stir until it is well combined and blended together evenly.

- For approximately (16) thick squares: spread the mixture into an 8 x 8 glass dish and very firmly press it down into the dish as tight and compact as you can.

- For approximately (32) thinner squares: spread the mixture into a 9 x 13 glass dish and very firmly press it down into the dish as tight and compact as you can.

Put the dish in the freezer for about 1 hour, or until it has hardened.

Store in the refrigerator for a "rice crispy treat" texture or in the freezer for a harder "crunchy candy bar" type treat.

    This nutrional powder sounds promising although one ingredient raises flags as it does in most of these super green mixes. The chlorella from Japan. I’m hesitant to consume anything coming from Japan after the radiation spill and the fact that Japan is very secretive about the amounts that have spilled. Everything from salmon to green tea needs to be radiation checked. What are your thoughts on this? If I read right this blend uses grape juice vs stevia for sweetness, that I like!!!!

      Hi there Katie! The radiation from Japan is a very valid concern. I won’t provide any particular links, but a simple Google search of “fukushima radiation map” will indicate that we should not only be worried about foods that come directly from Japan, but the West Coast of the United States as well.

      I contacted Vibrant Health regarding your question about chlorella and here is their response:

      “Our chlorella comes from Korea, not Japan. Our chlorella is actually harvested from an indoor controlled environment due to the fact that wild chlorella is so susceptible to contamination. When an ingredient is brought into the United States it is tested for radiation. Additionally, all of our ingredients, as well as final product are tested for heavy metals and microbacteria. Lastly, we consider the location and practices of our suppliers, and we will reject those that don’t have a stand-up reputation as well as ingredients that meet our standards.”

      I do not have concerns about the quality of the chlorella in the Vibrant Green products and will continue to use them unless other contradictory information were to become available.
