Gluten-Free Vegan Artichoke and Sun-Dried Tomato Fettuccine Pasta
Ingredients
- 1 package organic gluten-free fettuccine pasta (9-ounce box)
For the sauce:
- 1 1/4 cup organic raw cashews
- 3/4 cups homemade almond milk
- 2 tablespoons organic lemon juice
- 2 tablespoons nutritional yeast
- 2 cloves organic garlic
- 1 tablespoon 100% pure avocado oil
- 1/2 teaspoon Himalayan pink salt
- 1/4 teaspoon organic ground black pepper
For the add-ins:
- 1 can organic artichoke hearts (14-ounce can, drained and diced)
- 1/2 cup organic sun-dried tomatoes (diced)
Instructions
Prepare the pasta:
- Prepare the pasta according to your package directions.
Prep the add-ins:
- Dice the artichoke hearts and sun-dried tomatoes into small pieces.
Prepare the sauce:
- Add all ingredients for the sauce to a Vitamix and blend until creamy and smooth.
- Taste and adjust the seasonings to your preference.
Assembly:
- Once the pasta is ready, drain it and add to a large mixing bowl.
- Add the sauce and add-in ingredients and gently toss until everything is evenly distributed.
- Optional: garnish with chopped fresh basil leaves.

Is there a good cashew replacement for this recipe? One of my daughters is allergic to cashews and most recipes like this call for cashews.
