Gluten-Free Vegan Creamy Chipotle Avocado Pasta
This Shirataki Angel Hair Pasta with Creamy Chipotle Sauce is made with a raw vegan sauce that has lots of healthy fats from avocados and 100% pure avocado oil to keep you satisfied.
The day I made this, it was lunchtime and as I was trying to figure out what to make, I saw two sad little avocados looking at me. So very sad.
My first thought was to make my chocolate avocado cookies!
But I wasn't really in the mood for something sweet, so I remembered my Creamy Chipotle Avocado Sauce from several years ago that has only 4 clean ingredients (one being avocados!) and is ready in under 5 minutes using my Vitamix.
So that's what I went with, and instead of using it on a salad, I decided to use it with shitake angel hair pasta for a low-carb, vegan, gluten-free and lectin-free option.
The entire meal was ready in about 5 minutes and was very filling.

Expert Tips + Ingredient Substitutions for Creamy Chipotle Avocado Sauce
Here are some expert tips to make this recipe perfectly:
Pasta. There are many different pasta options you can use to make this recipe fit your dietary needs. For example:
- Medical Medium - Use spiralized veggie noodles (like zucchini) or an organic gluten-free pasta
- Lectin-Free - Use Miracle Noodles
- Paleo - Use spiralized veggie noodles (like zucchini)
- Gluten-Free - Use spiralized veggie noodles or an organic gluten-free pasta
- Vegan - Use any of the pasta options listed above
In addition, you don't have to exclusively use angel hair pasta - any type of pasta shape would work well.
Avocado Oil. This can be substituted with organic extra-virgin olive oil in the same amount.
Lime Juice. The freshly squeezed lime juice will give the best flavor and nutrients since it hasn't been pasteurized. However, you can substitute with store-bought organic lime juice. In addition, the lime juice can also be substituted with organic lemon juice in the same amount.
Chipotle. Feel free to adjust the amount of chipotle depending on how spicy you'd like the recipe to be. For example, start with 1/2 teaspoon and increase up to 1 teaspoon, or more for a spicier dish.
Himalayan Pink Salt. This is my salt of preference, however, it can always be substituted for sea salt.

Ingredients
For the sauce:
- 2 organic avocados
- 1/4 cup 100% pure avocado oil
- 2 tablespoons organic lime juice
- 1/2 - 1 teaspoon organic ground chipotle powder
- 1/4 - 1/2 teaspoon Himalayan pink salt
Instructions
Prepare the pasta:
- Prepare the pasta according to the directions on the package.
Prepare the sauce:
- Add all ingredients for the sauce to a Vitamix and blend until it's creamy and smooth.
- Adjust seasonings to your preference.
Assembly:
- Transfer the prepared pasta noodles to a medium-size bowl.
- Add the sauce into the bowl with the noodles and gently toss until it's evenly distributed
- Optional: Garnish with chopped organic fresh cilantro or organic baby spinach.
- Best when served warm.
- Store in an air-tight BPA-free container in the refrigerator.
