Tip #1: This recipe will make 1 – 2 servings.
Tip #2: When you process it in the food processor, process it just long enough until it gets to the consistency that you like. I like mine to be a little chunky with tiny pieces of cashews. If you prefer your with a smoother texture, just process it a little longer until it’s smooth and creamy.

Ingredients
- 2 organic zucchini (peeled and cubed)
- 1/2 cup organic cashews
- 1 scoop Field of Greens from Vibrant Health
- 1 clove organic garlic (freshly crushed)
- 3 tablespoons organic extra-virgin olive oil
- 2 tablespoons organic hemp seeds
- 1 tablespoon organic tahini
- 1 tablespoon organic lemon juice (freshly squeezed)
- 1 tablespoon water (purified/filtered)
- 1/2 - 1 teaspoon Himalayan pink salt
Directions
Step 1 | Prepare the zucchini - peel and dice the zucchini into cubes. Add the zucchini and all remaining ingredients to a food processor and process until well blended and to the texture you prefer (I like mine with tiny pieces of cashews instead of smooth). Serve with gluten-free chips, veggie slices, sandwich or wrap spread, etc. Enjoy! |
