Remove from heat and add the chopped pistachios and cranberries and gently stir in until they are completely covered in chocolate and evenly distributed. Spread the mixture evenly onto a baking pan lined with parchment paper. Sprinkle a few pinches of Himalayan pink salt (or sea salt) on top and (optional) crushed pistachios.
