Vegan Smoked Paprika and Black Bean Chili

Vegan / Gluten-Free / Dairy-Free / Nut-Free 

Ingredients

Optional Toppings: organic avocado, organic jalapeno, organic fresh cilantro

Instructions

  1. Prepare the veggies: dice the onion, bell pepper and tomato; chop the cilantro
  2. Add the avocado oil, garlic and onions to a large skillet and saute on medium/high heat for about 2-3 minutes, or until the onions are soft.
  3. Add the diced tomatoes and bell peppers, chopped cilantro, cumin, smoked paprika, Himalayan salt and black beans (entire can, drained).
  4. Simmer on low heat for 10-15 minutes or until the tomatoes and bell peppers are soft.  Adjust seasonings to your preference.
  5. Optional: top with diced avocados, sliced fresh jalapenos, chopped cilantro, etc.
  6. Store in an air-tight BPA-free container in the refrigerator.
  7. Enjoy!
