Ingredients

  • 2 organic zucchini (peeled, cubed)
  • 1/2 cup organic tahini
  • 1/2 cup organic sesame seeds
  • 1/4 cup organic lemon juice
  • 1 tablespoon 100% pure avocado oil
  • 1 teaspoon organic ground cumin
  • 1/2 teaspoon Himalayan pink salt

Instructions

  • Add all ingredients to a Vitamix and blend until it's creamy and smooth.
  • Taste and adjust the seasonings to your preference.
  • Store in an air-tight BPA-free container in the refrigerator.

Notes

Zucchini: You'll want to peel the zucchini before adding it to your Vitamix. To make it easier to blend, cut the peeled zucchini into cubes before adding.
Tahini: You can use an organic store-bought brand or make your own homemade tahini.
Lemon Juice: Fresh squeezed lemon juice is best, because it retains the most nutrients, but you can use organic store-bought as a substitute.
Avocado Oil: Can be substituted with organic extra-virgin olive oil if you prefer.
Himalayan Pink Salt: Substitute with sea salt.
