De-stem the kale and break into bite-sized pieces.
Add the kale pieces to a large mixing bowl and set aside.
Prepare the Creamy Jalapeno Dressing:
Add all ingredients for the dressing to a Vitamix and blend until creamy and smooth.
Taste and adjust the seasonings to your preference.
Assembly:
Transfer the dressing to the large mixing bowl and toss it with kale until all pieces are coated and it's evenly distributed.
Spread the kale pieces evenly onto mesh trays in the dehydrator and dehydrate at 115 degrees for approximately 4-6 hours, or until the coating is completely dried and the kale is crispy.
Store in an air-tight BPA-free container until ready to serve because the chips will get soft if they are exposed to the moisture in the air.
