Prepare a cookie sheet lined with parchment paper and set aside.
Prepare the peanut butter mixture:
Add all ingredients for the peanut butter mixture to a medium-size mixing bowl and stir until well combined.
Assembly:
Add the oats to a large mixing bowl then add the peanut butter mixture.
Using your hands, combine the oats with the peanut butter mixture, crumbling it together and leaving some big chunks, if desired.
Spread the granola onto the prepared cookie sheet - you may have to do two batches depending on the size of your cookie sheet.
Bake at 350 degrees Fahrenheit for 10-15 minutes keeping a close eye on it and taking care to not let it burn. You want it to be crunchy but not overcooked.
Optional: Toss in the peanuts, if desired.
Store in an air-tight BPA-free container.
