Notes
Frozen Acai Smoothie Pack: You will need to use a frozen smoothie pack, instead of acai powder, to get the correct consistency for a smoothie bowl. Therefore, I wouldn't recommend using acai powder as a substitute in this recipe.Almond Milk: I like to use homemade almond milk, but you can also use your favorite non-dairy milk as a substitute. Another great option is to use Joi Organic Almond Milk made with 100% organic almonds.Raspberries: You will need to use frozen raspberries for this recipe to get the correct consistency. However, if you use fresh raspberries, add 6-7 ice cubes to make the smoothie bowl thicker and frosty.Frozen Cauliflower Rice: You will need to use frozen cauliflower rice which will add to the frosty texture and make the smoothie bowl thicker. Cashew Butter: I added this ingredient to give the recipe a creamy texture, but it could be substituted with another neutral-flavored nut butter such as almond butter, sunflower seed butter, or even omitted if you prefer.Medjool Dates: Since the smoothie bowl will be somewhat tart from the raspberries, I added 2 Medjool dates to give it a little sweetness. If you'd like your smooth bowl a little sweeter, add a couple more dates.Optional Toppings: Enjoy plain or feel free to add extra raspberries, chia seeds, cacao nibs, or whatever your favorite topping are.Serving Size: This recipe will make 2 cups. Nutritional information is for 1/2 cup which is (1) serving.
