These super easy, bite-size Pecan Pie Truffles are a simple but perfect replacement for slice of traditional pecan pie!
It only takes 3 clean ingredients and about 5 minutes to make and they are a pretty darn close replica of the taste of traditional pecan pie.
Traditional pecan pie not only has a white flour + butter + shortening crust, but is made with other unhealthy ingredients with empty calories.

The store-bought version contains GMO ingredients (soy lecithin, soybean oil, cottonseed oil, corn syrup), refined salt, margarine?!, and several preservatives and the homemade version is heavy on the dairy, white flour and white sugar.

Lectin-Free Vegan Pecan Pie Truffles
Yield 6 - 8 truffles

- Add all ingredients to a food processor and process until it becomes a crumbly, sticky texture.
- Take out a spoonful at a time and squeeze the mixture tightly with your fist to compact it, then roll it into the shape of a ball with the palms of your hands.
- Enjoy immediately or place them in the refrigerator for about 10-15 minutes to firm.
