These Vegan Gluten-Free Chocolate Chip Scones are my December submission for The Recipe Redux.
The theme this month is:

The book I chose to pick a recipe from came from my local library and it’s called “Let Them Eat Cake – Classic, Decadent Desserts with Vegan, Gluten-Free & Healthy Variations” by Gesine Bullock-Prado.
The original recipe I used from the book was called “Key Lime Cranberry Scones” and although it gives a vegan and gluten-free variation, I didn’t follow either of those very well and made some substitutions.
Traditional scones are typically made with unhealthy ingredients like these:

Typical Ingredients: white flour, white sugar, butter, cream, eggs, yogurt
This healthier version is vegan, gluten-free, dairy-free, egg-free, paleo-friendly and contains no refined sugar.
