Just use the same crust ingredients and the optional homemade whipped coconut topping!
Yes, the pecans in the crust could be substituted with your favorite nut such as walnuts or even almonds.
If you want a little variety, you could also add shredded coconut to mix in with the crust mixture.
It is super easy to make my optional Homemade Whipped Coconut Topping.
If you do, keep in mind that you would need to place a can of full-fat coconut milk in the back of your refrigerator overnight before making the whipped topping so you would need to plan ahead.

A traditional S.A.D. (Standard American Diet) peach tarts typically contain the following ingredients:
S.A.D. Baked Peach Tart Ingredients: 1 ½ cups white all-purpose flour, ¾ cup white refined sugar, ¼ cup vegetable or canola oil, ¼ cup olive oil, milk, salt, butter, almond extract, peaches.
And a no-bake peach tart isn't much better:
S.A.D. No-Bake Peach Tart Ingredients: 2 cups shortbread cookies, 4 tablespoons butter, 1 package cream cheese, ⅔ cup powdered sugar, ⅓ cup caramel topping, 1 ½ cups whipped topping, cornstarch, peaches.
Both are not gluten-free and contain dairy.
My healthier version is made with only 5 clean, real food ingredients and is 100% gluten-free and vegan!
Of course, fresh peaches would be ideal and give the best flavor, but you could always substitute them with frozen or canned with the following suggestions:
Frozen Peaches: Allow them to thaw and soften before adding them to the tart.
Canned Peaches: One of the downsides of using canned peaches is that they contain added sugar. Drain the can and rinse them off in filtered/purified water. Try to buy organic in a BPA-free can if possible.
Also, most canned peaches will have ascorbic or citric acid added so you would need to skip this option if you need the recipe to be 100% Medical Medium® Compliant. I did find this brand that did not have ascorbic or citric acid and are in a glass jar, but they aren't organic.

Karielyn's Expert Tips + Ingredient Substitutions
Here are some of my expert tips to make this recipe perfectly:
- Peaches: Fresh peaches will give you the best flavor, but if you don't have any you could also use frozen or canned. Please see the FAQ sections for instructions of how to use frozen or canned peaches. You could also substitute the peaches for whatever fruit you have on hand such as strawberries, cherries, raspberries, blackberries, mango, etc.
- Pecans: I like to use pecans in my no-bake crusts, but you can substitute with another nut such as walnuts or almonds.
- Medjool Dates: This is what binds the crust together and the main source of sweetness. Make sure the pits are removed from the dates before adding them to your food processor.
- Maple Syrup: I added this as a little extra sweetener in the crust but if you would like to reduce the sugar/carb content in the recipe, it could be omitted.
- Himalayan Pink Salt: This is my salt of preference; however, feel free to use your favorite sea salt.

Gluten-Free Vegan No-Bake Peach Tart

- 1 organic peach (sliced)
For the crust:
- ¼ cup organic pecans
- 2 organic Medjool dates (pitted)
- 1 tablespoon organic maple syrup
- 1 pinch Himalayan pink salt
Optional toppings:
- 1-2 tablespoon homemade whipped coconut cream
- 1 tablespoon organic hemp seeds
Instructions
Prepare the crust:
- Add all the ingredients for the crust to a food processor and process until the mixture has a wet, crumbly texture.
- Press the crust mixture firmly into the bottom of a small 5-inch tart dish.
Prepare the peaches:
- Peel and slice the peaches and arrange neatly over the crust mixture.
Assembly:
- Optional: Add 1-2 dollops of homemade whipped coconut cream in the center.
- Optional: Sprinkle with hemp seeds or shredded coconut flakes.
