This Raw Vegan Creamy Chipotle Dressing is another creation from Russell James, The Raw Chef and it just doesn't get any easier than this.
It was originally paired with his Wilted Kale Salad with Creamy Chipotle Dressing recipe that is to die for.
The dressing only has 4 clean, healthy ingredients and takes about 2 minutes to make in a Vitamix.
It's perfect with the Wilted Kale Salad but also would be great as a spread on a wrap or even as a dip with some healthy crackers.
And the good news is it only needs 4 clean, real food ingredients and it's raw, vegan, gluten-free, dairy-free, nut-free, lectin-free, alkaline and paleo-friendly too!
Gluten-Free Vegan Creamy Chipotle Dressing
Equipment
- Vitamix or high-speed blender
Ingredients
- 2 organic avocados
- ¼ cup organic extra virgin olive oil
- 2 tablespoons organic lemon juice
- ½ - 1 teaspoon organic ground chipotle powder
Instructions
- Add all ingredients to a Vitamix, or high-speed blender, and blend until well combined and creamy.
- Adjust seasonings to your preference.
- Serve with a salad, spread on a wrap or as a dip.
- Enjoy!

I am curious to know if chipotle peppers are actually raw since they are usually smoked at temperatures above 200 degrees.?

Hi there Basil! Ground chipotle powder is not raw, but the recipe is a "no-cook" recipe, which is why I labeled it a "raw" recipe.
If you need the recipe to be 100% raw, you can omit the chipotle powder, I just added it for the flavor.
