How To Make This Recipe: Step-By-Step Instructions
Here is how to make this recipe and I'll show you how easy it is with step-by-step instructions below.

Step 1 - Prep the Zucchini
You'll need to take a quick minute to peel the zucchini then cut it into cubes before adding it to your Vitamix or high-speed blender.

Step 2 - Prepare the Zucchini Hummus
Add all the ingredients to your Vitamix.

Step 3 - Blend the Zucchini Hummus
Blend all the ingredients until everything is creamy and smooth, using a tamper if needed.
Taste and adjust the seasonings to your preference.

Step 4 - Optional Garnish
Add sesame seeds and fresh chopped basil as a garnish.
Store your hummus in an air-tight BPA-free container in the refrigerator for 2-3 days. I like to use a glass mason jar to store mine in.

Frequently Asked Questions
When I originally created this recipe in 2012, I used (2) zucchini. Since zucchinis vary in size, it will affect the consistency of the hummus.
I usually buy individual zucchini at the grocery store and when I made the recipe in 2012, I bought (2) large ones, which yielded more zucchini and make the hummus thinner.
However, when I purchased zucchini to make the updated step-by-step photos, I purchased a bulk bag from Costco and they were much smaller, like 7-inch long each, which yielded less zucchini and made the hummus thicker.
To make it easier, I updated the recipe to show the amount of zucchini needed in cups so it would be more consistent since zucchini sizes vary.
- For a thicker hummus: Use (1) cup of peeled and cubed zucchini
- For a thinner hummus: Use (2) cups of peeled and cubed zucchini
Feel free to adjust the seasonings and other ingredients depending on how much zucchini you use.

I haven't tested this method, but it should work well with a food processor since there aren't any hard ingredients to blend.

Karielyn's Expert Tips + Ingredient Substitutions
Zucchini. As mentioned earlier, you want to peel the zucchini before adding them to your Vitamix. Also, cutting them into small pieces, like a cube shape, will help them blend easier.
Tahini. I love to make homemade tahini, and you can too in about 5 minutes using just a food processor. If you're in a hurry or don't want to make homemade tahini, you can always use organic store-bought tahini.
Lemon Juice. Using freshly squeezed lemon juice will give you a more intense lemon flavor and nutrients, but you can also use an organic store-bought lemon juice.
Ground Garlic. Can be substituted with (1) clove of fresh garlic.
Himalayan Pink Salt. This is my preferred salt, but you can always use sea salt as a substitution.
Vitamix. If you don't have a Vitamix, you should be able to make it in a regular blender or even a food processor since it's made with "soft" ingredients, but I haven't tested it with either of those.

Raw Zucchini Hummus Without Chickpeas

- Vitamix (or high-speed blender)
Ingredients
- 1 cup organic zucchini (peeled, cubed)
- ½ cup organic tahini
- ½ cup organic sesame seeds
- ¼ cup organic lemon juice
- ½ teaspoon organic ground garlic
- ½ teaspoon organic ground cumin powder
- ½ teaspoon Himalayan pink salt
Instructions
- Add all ingredients to a Vitamix, or high-speed blender, and blend until it's creamy and smooth using a tamper if needed.
