This single serving Raw Peach Tart is a really simple recipe that only takes three quick steps.

Prepare the crust, prepare the whipped coconut cream and assemble.

And, if you already have some Homemade Whipped Coconut Cream prepared, it makes it even easier.

It’s a perfect way to use fresh summer peaches, but you could also use frozen organic slices.

You could easily make this a raw vegan dessert just by substituting the raw organic honey for organic maple syrup.

Ingredients

  • 1 organic peach (sliced)
  • 1 - 2 tablespoon homemade whipped coconut cream
  • 1 tablespoon organic hemp seeds (Nutiva brand)

For the crust

  • 1/4 cup organic pecans
  • 2 Large organic medjool dates (pitted)
  • 1 tablespoon organic raw honey (or organic maple syrup for vegan)
  • 1 pinch pink himalayan salt

Directions

Step 1 Put the pecans, dates, raw honey (or maple syrup) and pink himalayan salt into a food processor and process until a sticky crumbly texture.

Press the crust mixture firmly into a small tart dish.

Slice the peaches and arrange neatly over the crust mixture.

Put a 1 - 2 dollops of coconut cream in the center.

Sprinkle with hemp seeds.

How To Make Whipped Coconut Cream Topping (Vegan, Gluten-Free, Dairy-Free, Paleo-Friendly, No Refined Sugar)

Ingredients

  • 1 can organic full-fat coconut milk (13.5 ounce, unsweetened)
  • 2 - 4 tablespoons organic unrefined granular sweetener
  • 1 teaspoon organic vanilla bean powder (or organic vanilla extract)

Directions

Step 1 Put a can of full-fat coconut milk in the refrigerator overnight.

When you open the can, there will be a layer of thick cream on the top and coconut water on the bottom.

Scoop out the thick cream and put it in an electric mixer bowl (save the coconut water to make a smoothie).

Add the granular sweetener and vanilla of your choice (Note: vanilla bean powder will give it a slightly darker color and/or black specks. If you prefer a pure white color, omit the vanilla bean powder or use vanilla extract).

Mix on high setting with the "whisk" attachment until it becomes thick.

Use as a topping on fruit, granola, pancakes, desserts, parfaits, etc.
