These Gluten-Free Vegan Chocolate Chip and Pistachio Brownie Truffles are an easy no-bake treat that's ready in about 10 minutes.
I had originally planned to share these as a St. Valentine's Day treat but ended up posting this recipe instead.
These easy-to-make truffles are a slight variation of my Pistachio Sesame Seed Balls recipe which is a reader favorite on my website with over 20,000 pins!
In place of the sesame seeds, I added chocolate chips and raw cacao powder to give them a deep chocolate brownie taste and texture, then added chopped pistachios.
They're a perfect snack to go with a cup of warm herbal tea and are raw, vegan, gluten-free, dairy-free, no-bake, paleo-friendly and contain no refined sugar.

Gluten-Free Vegan Chocolate Chip and Pistachio Brownie Truffles
Ingredients
For the truffles:
- ½ cup organic almond butter
- 1 cup organic medjool dates pitted
- 2 tablespoons organic raw cacao powder
- 1 tablespoon organic coconut oil
- 1 tablespoon filtered/purified water
- ⅛ teaspoon organic vanilla bean powder or organic 100% pure vanilla extract
- 1 pinch Himalayan pink salt
For the add-ins:
- ½ cup organic pistachios crushed
- ¼ cup Enjoy Life mini-chocolate chips
Instructions
- Prepare the pistachios: Crush the pistachios into small pieces using the flat side of a butter knife. Set aside.
- Add all ingredients for the truffles to a food processor and process until it becomes a wet, thick mixture.
- Add the chopped pistachios and chocolate chips and stir in by hand until they are evenly distributed.
- Take out a spoonful at a time and roll into a ball shape between the palms of your hands.
- Place the truffles on a plate lined with parchment paper.
- Enjoy immediately or place in the refrigerator for 10-15 minutes to firm.
- Store in an air-tight BPA-free container.

But no coconut oil listed in ingredients for quantity?

Hi there Kathryn! #embarrassing, I completely left out the coconut oil in the recipe! It should read "1 tablespoon organic coconut oil" and I've updated the recipe to add it in.
