After you've prepared the recipe as is, just taste the dressing and see if you'd like to add a little Himalayan pink salt or ground black pepper to it.

The original recipe creator used it as a dressing for his Massaged Kale Salad, and it pairs perfectly with the salad.
However, if it's prepared without any modifications, it is somewhat thick and would made an excellent dip for veggies, grain-free chips or as a spread for avocado toast.
I haven't tested the recipe with a regular or high-speed blender, but I do not see why either would not work for this recipe since there are no hard or difficult items to blend.
It's best to use it immediately but if you need to store it, use an airtight BPA-free container and store in the refrigerator for no more than 1-2 days, even though there is lemon juice to help extend the life of the avocados.

Homemade versions are not as bad as processed store-bought versions, but many are not vegan because they can sometimes contain sour cream or egg yolks.
However, store-bought brands that are highly processed are another story.

Here are some of my expert tips to make this recipe perfectly:
Avocados: If you will be making the dressing right away, choose avocados that are slightly soft which means they are ripe and ready to use. If you will be making it later, you could choose a harder avocado which will take a few days to ripen.
Extra-Virgin Olive Oil: This could be substituted with pure avocado oil in the same amount.
Lemon Juice: Fresh squeezed lemon juice will give you the best flavor, but you could substitute with bottled organic lemon juice.
Chipotle Powder: You could use regular ground chipotle powder or even ground smoked chipotle powder which will give the dressing a deeper flavor.

Vegan Creamy Avocado Chipotle Dressing

Ingredients
- 2 organic avocados
- ¼ cup organic extra virgin olive oil
- 2 tablespoons organic lemon juice
- ½ - 1 teaspoon organic ground chipotle powder
Instructions

I am curious to know if chipotle peppers are actually raw since they are usually smoked at temperatures above 200 degrees.?

Hi there Basil! Ground chipotle powder is not raw, but the recipe is a "no-cook" recipe, which is why I labeled it a "raw" recipe.
If you need the recipe to be 100% raw, you can omit the chipotle powder, I just added it for the flavor.
